Mighty Macaroni with Cheese & Tomato

Tasty, melts in the mouth macaroni in a delicious cheese sauce with a crunchy Parmesan top. Perfect for fussy eaters.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 4 servings

350 g macaroni
4 medium tomatoes, skinned, seeded and chopped

Cheese Sauce
45g butter
45g flour
450 ml milk
85g Swiss cheese, shaved
60g freshly grated Parmesan
150g mascarpone

40g breadcrumbs
20g freshly grated Parmesan

Cook the macaroni in salted boiling water until al dente. Drain.

Melt the butter in a saucepan, stir in the flour and cook for 1 minute. Gradually add the milk, stirring over a low heat for 5 minutes.

Remove from the heat, stir in the Swiss cheese and Parmesan until melted, follow by the mascarpone.

Pour the cheese sauce over the macaroni and heat through gently. Stir in the chopped tomatoes.

Transfer to a greased ovenproof dish or individual ramekins. Mix together the breadcrumbs and Parmesan and sprinkle on top.

Bake under a preheated grill until golden and bubbling.
