Millionaire Shortbread

Just because shortbread wasn't indulgent enough, in the 1970s people decided to slap on a layer of caramel and chocolate on top for good measure. I don't know how the name was invented, but when presented with a slice, you definitely feel like you've just hit the jackpot.

Preparation Time: 1hr 10 minutes (including chilling time)
Cooking Time: 40 minutes
Makes: 16 servings

Ingredients

For the Shortbread

  • See the ingredients for Petticoat Tails

  • For the Caramel

    225g margarine
    1 tbsp sweetener (or 100g caster sugar)
    395g condensed milk
    4 tbsp golden syrup
    Juice from a squeezed orange

    For the Chocolate

    400g dark chocolate

    Method



  • Follow the instructions for Petticoat Tails (except for slicing the base and sprinkling the top with sugar)



  • Melt all of the caramel ingredients together in a saucepan and stir continuously until it becomes thick. This should take about fifteen minutes.



  • Allow the caramel to cool, and then pour equally over the two tins of shortbread.



  • Melt half the chocolate over a pan of hot water, remove from the heat, and then stir in the remaining chocolate until it has melted.



  • Pour the chocolate equally over the caramel and allow to set in the fridge.



  • Cut into slices.
