Millionaires Shortbread
This is a Scottish millionaire's shortbread recipe. It uses pure butter shortbread in the base and so the crust doesn't required any baking. I used white chocolate for the top layer but dark or milk could work too. In this recipe I used a tin of caramel, because I had a spare one to use up. It was a bit too squishy, so homemade caramel would probably work better, as it tends to set better: try my recipe for

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 8 servings
Ingredients
400g butter shortbread
75g butter
300g caramel
200g white chocolate
Method
Line a baking pan with greaseproof paper - I used a 20cm round one, but go with whatever shape you have.
Blitz the shortbread biscuit to a fine crumb in a food processor (or bash it to bits with a rolling pin and a food bag).
Melt the butter over a low heat or in the microwave and then combine with the biscuit crumbs.
Press the biscuity buttery mixture into the bottom of the baking pan. Smooth down with the back of a spoon and then put it in the fridge to set.
Once set, spoon the caramel over the biscuit base. Put it back in the fridge.
Put a heat-proof bowl over a pot of gently simmering water.
Melt the white chocolate and then pour over the caramel. Tip it around to even it out and put it in the fridge to set.
Decorate with edible glitter for a luxe look.
