Milo Muffincakes

A muffin or a cake? There has been much debate in our house about what these really are. Thus the muffincake was born.
Whatever you want to call them, they taste delicious.

Great straight out of the oven or even better in a school lunchbox.



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: Approx 12 muffin cakes

Ingredients
1 ½ cups of self-raising flour
2/3 cup of Milo
2 eggs
2/3 cup of milk
2/3 cup of brown sugar
½ teaspoon baking powder
60 grams of melted butter


Method
  • Preheat oven to 190 degrees (170 fan forced).
  • Prepare a muffin tray. I like to lightly spray with coconut oil.
  • Combine dry ingredients. Do not worry about sifting the flour.

  • Lightly whisk egg and milk to combine. Add melted butter to milk mix. It will seperate but that is fine.


  • Gently add the wet mix to dry ingredients. It is quite a thick batter.


  • Fill muffin tray using an ice cream scoop to allow for even cooking of the muffincakes.


  • Bake for 20-25 minutes or until a toothpick is inserted and comes out clean.
