Minced Beef and Potato Stew
This stew is warming, and very filling! The chilli adds a pleasant kick, and the potatoes help to bulk it up.
I like to cook a big batch, and store the rest in the freezer, to eat when I don't have time to cook.
Preparation Time: 15 minutes
Cooking Time: 30-40 minutes
Makes: 4-6 servings
Ingredients
500g beef mince
1 onion, diced
2 garlic cloves, finely chopped
2 potatoes
2 carrots, peeled, sliced and halved
1 zucchini, sliced and quartered
1 x 400g tin chopped tomatoes
1 stock cube (Oxo or equivalent)
1-2 tsp chilli flakes
1-2 cups water
pepper and salt to taste
Method
Heat some oil in a pan and lightly fry the chopped onions and garlic until they turn a slight golden colour.
Add the mince, mix and cook until it is browned.
In the same pan, add the tinned tomatoes. Mix in the diced potatoes and top up with boiling water, until the potatoes are covered. Put the lid on the pan and allow it to cook for 10-15 minutes.
Stir in the carrots and zucchini to the sauce, and cook for 5 minutes.
Crumble the stock cube into the pan, and add the chilli, pepper and salt to taste.
Allow the sauce to thicken and cook until all the vegetables are cooked through.
Serve up either on its own as a stew, or serve it with pasta or rice.
