Minced Pork & Mushroom Noodle with Fish Ball Soup

This noodle is very simple to prepare and cook but full of flavour. It makes a great lunch or dinner for the family.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 4 servings

500g pork mince
2 stalks scallions, finely chopped
1 packet egg noodle
1 tbsp soy sauce
1 tsp sesame oil
roast garlic
1L vegetable stock
12 fish balls
garlic chilli sauce, to serve

10 chinese mushrooms, diced
3 cloves garlic, minced
1 tbsp grated ginger
2 tbsp cornstarch
2 tbsp oyster sauce
2 tbsp soy sauce
2 tbsp sesame oil
1 tbsp chinese cooking wine
Dash of white pepper

Marinate the minced pork with all the seasoning ingredients for 10 minutes.
Heat 2 tablespoons vegetable oil in a frying pan, cook the marinated pork mince until the meat is browned and cooked.

In the bowls to serve the noodle, mix in the soy sauce, sesame oil and roasted garlic.

Remove the noodles from the packet and loosen with hands. Cook the noodle one by one in a boiling water for 25-30 seconds.

Drain the noodle and washed under cold running water for 5 seconds.

Pour the noodles into the prepared bowl and toss to coat. Repeat with the remaining noodles.

Spoon the cooked meat on top of the noodle and sprinkle scallions.

Bring the vegetable stock to the boil. Add in the fish balls and cook for 5 minutes.

Serve the noodle with fish ball soup and garlic chilli sauce.
