Mini Chorizo, Asparagus And Cheese Tarts

It is sometimes difficult to decide what to cook each night.

Today I had no idea what to make for dinner, so looked in the fridge and found a few ingredients -it is out of these ingredients that I made these mini tarts.

They could also be made with slices of bread rolled thinly instead of pastry and of course, for vegetarians, omit the chorizo.

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 12 mini tarts

1 sheet Puff pastry
Bunch fresh asparagus
Chorizo sausage
2 spring onions
About - cup grated Parmesan cheese
2 eggs
Bit of extra grated cheese (optional)

Cut the chorizo into thin slices and then halve. Cook till it is brown, then drain on paper.

Roll the pastry till it is quite thin (or to your liking) and using a cup, cut out rounds to fit your muffin tin.


Thin them out a bit with your fingers so that they line each section of the muffin pan, ensuring they come right to the top.


Prick and bake in a hot oven for about 7 - 8 minutes.

Meanwhile chop off the tough ends of the asparagus and cut it into small pieces. Boil for about 2 - 3 minutes, then drain on paper. Leave the top pieces for decoration on top.

Chop the spring onions finely, and cook in the saucepan where you cooked the chorizo, till soft.

Line each small tart with several slices of chorizo, divide the asparagus, and add some of the spring onions.

Beat the eggs and grate the Parmesan or other cheese into the egg mixture, till the egg is quite thick. Add some pepper if desired.


Divide this mixture evenly over the tarts, Add a bit more grated cheese (optional) if there is room, and dot with the reserved pieces of the asparagus.


Bake for about 10 minutes till the cheese is bubbly.


Serve with a salad of your choice -I used red cabbage, grated carrot and a bit of raw broccoli and added some wasabi mayonnaise.
