Mini Christmas Cupcakes

Here is a quick and easy recipe which will look great on your Christmas table.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 24 mini cupcakes

Ingredients
2 cups self-raising flour, sifted
3/4 cup caster sugar
3/4 cup milk
125g butter
2 eggs
1 teaspoon Vanilla Essence

Icing
1 1/2 cups icing sugar
Red food colouring
1 to 1 1/2 tablespoons hot water

Method
  • Preheat oven to 200 degrees celcius and line 2 x 12 hole mini cupcake pans with cases.

  • Mix flour and sugar in a bowl. Make a well in the centre and add the milk, butter, vanilla and eggs. Stir to combine.

  • Put mixture into prepared cupcake pan and bake for 10 minutes or until golden brown.

  • Once cupcakes are finished, allow to cool completely before preparing the icing.

  • To prepare icing, sift icing sugar into a small bowl. Put water and food colouring into a cup together and mix before slowly adding the water mixture until the right consistency is reached.

  • Ice cupcakes and arrange on a platter ready for your party.
