Here is a quick and easy recipe which will look great on your Christmas table.
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 24 mini cupcakes
Ingredients
2 cups self-raising flour, sifted
3/4 cup caster sugar
3/4 cup milk
125g butter
2 eggs
1 teaspoon Vanilla Essence
Icing
1 1/2 cups icing sugar
Red food colouring
1 to 1 1/2 tablespoons hot water
Method
Preheat oven to 200 degrees celcius and line 2 x 12 hole mini cupcake pans with cases.
Mix flour and sugar in a bowl. Make a well in the centre and add the milk, butter, vanilla and eggs. Stir to combine.

Put mixture into prepared cupcake pan and bake for 10 minutes or until golden brown.
Once cupcakes are finished, allow to cool completely before preparing the icing.
To prepare icing, sift icing sugar into a small bowl. Put water and food colouring into a cup together and mix before slowly adding the water mixture until the right consistency is reached.
