Mini Gluten Free Frittatas

These frittatas are wonderful for a morning brunch or afternoon tea. This recipe uses zuccini, capsicum and mushrooms but feel free to mix it up by adding any vegetables you like. Best of all they are gluten free so are a great option for people with gluten intolerance or coeliac disease.

Preparation Time: 20 minutes
Cooking Time: 12 minutes
Makes: 40 servings

Ingredients
16 eggs
1 tsp salt
1/2 tsp pepper
1 red capsicum
1 green capsicum
6 medium mushrooms
1 zuccini
1 tbsp chives, chopped
1 cup grated cheese

Method

  • Preheat oven to 200 degrees.

  • Chop capsicums, mushrooms and zuccini into small cubes.



  • Beat eggs, chives, salt and pepper together in a large bowl until combined.




  • Grease average sized muffin trays and distribute ingredients between them, filling to half way with the egg mixture.



  • Top with cheese and bake for 10 - 12 minutes, or until cheese is melted and egg cooked through.



  • Remove from muffin trays. Serve hot or cold.



  • Enjoy!
