Mini Mud Cakes with Cream Cheese Frosting

These miniature mud cakes are the perfect treat for chocolate lovers, deliciously chocolatey and moist with the cream cheese adding a refreshing zing. So delicious you'll have to take two!

Preparation Time: 30 minutes
Cooking Time: 10 minutes
Makes: 48 mini cakes

Mud Cake Ingredients
1/4 cup cocoa powder
1 1/2 cups plain flour
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup milk
2 tsp apple cider vinegar
1/2 cup vegetable oil
1 tsp vanilla essence

Frosting Ingredients

180g cream cheese
90g butter, softened
1 tbsp milk
1 tsp vanilla extract
3 cups icing sugar


Method
  • Preheat oven to 180 degrees

  • Sift cocoa powder, flour, baking powder, baking soda, sugar and salt into a large bowl.



  • In a seperate bowl whisk milk, vegetable oil, apple cider vinegar and vanilla together until combined.



  • Pour liquid ingredients into the flour mixture, stir until smooth.



  • Spoon mixture into cupcake cases, filling them half way.



  • Bake for approximately 10 minutes, or until a skewer inserted into the centre comes out clean. Cool completely on a wire wrack.



  • While cakes are cooling beat cream cheese and butter in a medium bowl with an electric mixer until smooth. Add milk and vanilla, then gradually add icing sugar until frosting is as thick or thin as you would like it.

  • Spread or pipe frosting onto cakes. Leave for a few minutes to set then serve.
