Mini Oreo Cheesecakes

A simple little indulgence that never fails to impress your friends
I am not a strong cheesecake fan but this little gems are amazing especially with oreos! I've made these a few times and friends are always impress with not only how cute they are but also the light and great combination of oreos and cream cheese.
Preparation Time: 10 mins
Cooking Time: 35 mins
Makes: 9 servings
Ingredients
9 whole oreos
3 oreo corsely chopped
227g cream cheese, softened
1/4 cup sugar
1/4 tsp vanilla extract
1 egg beaten
1/4 cup sour cream
pinch of salt

9 whole oreos
3 oreo corsely chopped
227g cream cheese, softened
1/4 cup sugar
1/4 tsp vanilla extract
1 egg beaten
1/4 cup sour cream
pinch of salt
Method
Preheat oven to 135 degrees celsius
Lined muffin cups in muffin tray. Add an oreo cookie into the muffin cups
Using an electric mixer beat cream cheese until creamy
Gradually add in sugar and beat till smooth
Add in vanilla essence
Drizzle in egg and mix well
Mix in sour cream and salt
Fold in chopped oeros
Scoop cream cheese mixture into each cookie muffin cup
Bake 22 mins or until it looks almost set
Cool down and refrigerate at least 4 hours before serving
