Mini Tim Tam Cheesecakes

Tim Tims are one of the few things that I don't believe society can live without. Cheesecake is another. Whenever I combine these two in my house, they last a day at best because they're that good!

These are perfect little desserts that are great for parties, big families or to have something sinfully amazing! The vanilla cheesecake combined with the Tim Tam base and the vanilla whipped cream on top makes for the perfect combination!

Preparation Time: 30 minutes plus fridge time -about 3½ - 4 hours
Cooking Time: 35 minutes
Makes: 12 servings

3x 200g packets of original Tim Tam biscuits
80g butter

Cheesecake Filling:
500g cream cheese, softened to room temperature
3/4 cup sour cream
3/4 cup castor sugar
2 large eggs
2 teaspoons of vanilla essence

400ml thickened cream
1/4 cup icing sugar
1 teaspoon vanilla essence
1 packet of mini Tim Tam biscuits
cocoa for dusting

  • Line a muffin tray with either paper or aluminium muffin cases.
  • Roughly chop the Tim Tams and set aside.
  • Fill a medium sized saucepan with water and place a heat proof bowl on top.
  • Add the crushed Tim Tams and the butter to the bowl and melt on medium heat until combined. Set aside for a couple of minutes to cool slightly.

  • Press 1cm of the mixture into the bottom of the cases. Refrigerate for 30 minutes.

  • Cheesecake Filling:
  • Preheat the oven to 135 degrees C. Ensure that the rack is in the middle of the oven.
  • Beat the cream cheese in a large bowl until smooth.
  • Add the sour cream and castor sugar and beat until thoroughly combined.
  • Pour the vanilla essence into the mixture and combine.
  • Slowly beat in each of the eggs until they are just combined.

  • Remove the muffin tray from the refrigerator and evenly dollop the cheesecake filling into each of the 12 cases. Gently shake the tray to ensure there are not spaces or air bubbles.
  • Cook in the oven for 22 minutes. The middle of the cheesecakes will jiggle slightly still.

  • Leave on the bench to cool. Refrigerate for 3 hours. Remove muffin cases.

  • Topping:
  • In a medium sized bowl, beat together the thickened cream, icing sugar and vanilla until soft peaks form.

  • Using a star shaped piping tip, pipe a peak of whipped cream on top of the cheesecake.
  • Sprinkle with cocoa.
  • Insert one of the mini Tim Tams into the whipped cream and cheesecake.
