These chocolate cupcakes are quick and easy to make and ideal if kids want to get involved too. Making them into mini towers adds a point of difference compared to the usual ones you get with frosting on top.

Ingredients
Cake
110g softened butter
110g caster sugar
2 eggs
75g SR flour
25g cocoa powder
Butter Icing
70g softened butter
170g icing sugar
40g cocoa powder
Dash of milk
Method
Preheat the oven to 180 degrees c and place your cupcake cases in a tin. We used a mixture of paper ones and some colourful silicone ones given as a gift.
Beat together the butter and sugar.
Add a little of the egg at a time and mix through until all is added.
Fold in the flour and cocoa powder.
Divide the mixture among the 16 cupcake cases and place in the oven for 15 minutes. They will be ready when you stick a skewer in and it comes out clean.
Leave to cool on a wire wrack.
For the icing, beat the ingredients together and add a little milk until you have a smooth consistency.
Using a sharp knife, cut out the top of the cake at a slight angle.
Fill the hole you have created with icing and place the cake top back on.
Dust with a little icing sugar for an extra special finish.
