Mint Chocolate Brownies

These delicious are sure to surprise! Both egg and dairy free, suitable for vegans and children with allergies, they are wonderful to have for kids parties.

Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 12 servings

Ingredients
2 ½ cups of self-raising flour
1 cup of water
2 tablespoons dairy-free spread
¼ cup mint hot drinking chocolate
1 ½ cups of sugar
1 teaspoon vanilla extract
½ teaspoon of salt
½ cup of sprinkles

Method
  • Pre-heat your oven to 160 degrees, and spray a medium sized deep baking tray with baking spray and line with grease proof paper.

  • In a large saucepan, heat one cup of water. Once warm add ½ cup of self-raising flour and mix through until it forms a smooth paste. Then place to one side.



  • In a small saucepan, heat the butter until it has all melted. Add the mint hot drinking chocolate and mix until a sauce like mixture has come together. This can be now placed to one side.



  • In the large saucepan, add the sugar, vanilla extract and salt and mix through thoroughly.



  • Once this has been mixed through you can add contents of the small saucepan. Once again mix thoroughly.



  • Then add your sprinkles to the mix and stir through again.



  • Pour the contents of the large saucepan into the pre-prepared baking tray. Bake for approximately 30-35minutes.



  • Slice into small squares and serve!



  • These brownies are best served warm, with extra sprinkles on top and a dollop of custard or whipped cream!



  • To re-heat the brownies, microwave for approximately 25-30seconds.
