Miso Chicken Wraps
Wraps are such a quick, easy and portable lunch, dinner or picnic food. Depending on what ingredients you use, they can be incredibly filling and a healthy alternative to sandwiches or rolls.
Health conscious with the food I eat, I always buy wholegrain or rye wraps and use lashings of avocado as my spread. This provides moisture and is the binding ingredient for all other fillings. Let your imagination run wild with the myriad of different fillings you use or better still it’s a great way of using up leftovers.
Kids and adults alike will enjoy these wraps and the best part is that it’s not labour intensive. You simply lay out all the ingredients on small plates (tapas style) and let everyone assemble their own wraps.
Wraps are such an easy and quick meal. If youre pressed for time these are ideal as you can eat them on the run. Theyre a great picnic food as well.
Today the primary ingredient is chicken which I’ve spiced up by marinating in white miso paste. Marinating the chicken makes it extremely tender and adds an extra zing to the wraps - hope you enjoy.

Makes: 2-3 servings
Ingredients
6 Wraps
2 Chicken Breasts
Miso Marinade
50gm White Miso Paste
4 Teaspoons Mirin
2 Teaspoons Salt Reduced Soy Sauce
1 Teaspoon Dashi Powder
1 Teaspoon Ginger Powder
2 Teaspoons of Rice Bran Oil
Suggested Ingredients to use as filling
Parmesan Cheese (or any cheese based on personal taste)
Greek Yoghurt
Tomato Chutney
Rocket or Baby Spinach Leaves
Basil Leaves
Avocado
Tomato
Olives
Method
Combine all the marinade ingredients into a large bowl and mix thoroughly.
Add the chicken and leave to marinade for a couple of hours in the refrigerator. The longer you can leave the marinade to absorb into the chicken the more flavoursome and tender the chicken will be.
Marinate the chicken for at least a couple of hours, so the meat is able to absorb the miso flavour.
Grill or pan-fry the marinated chicken until cooked – this should take approximately 10-minutes.
Grill or panfry the marinated chicken.
When cooked, remove and set aside to cool for 5-minutes.
While the chicken is cooling, platter up the various ingredients you will be using as filling. Popular choices include lettuce, baby spinach or rocket and tomatoes, cheese, olives, avocado.
Slice the chicken into bite size pieces and serve on a separate platter to the salad ingredients.
