Tofu is the perfect blank canvas in which the possibilities are endless. Here I have teamed the protein packed tofu with miso paste to create an indulgent tasting, Japanese style main.

Cooking Time: 30 minutes
Makes: 3 servings
Ingredients
1 tbsp miso paste
1 tbsp light soy sauce
1 tbsp rice vinegar
300g firm tofu
Method
In a shallow dish, mix together the miso, soy sauce, and rice vinegar until a smooth sauce has formed. Place tofu slices into the sauce and refrigerate for 30 mins, turning halfway.
Transfer tofu to a lined baking tray and drizzle with the dressing. Cook for 30-35 mins, turning halfway through, until a deep brown and the sauce has most evaporated.
Set aside to cool and serve either warm or chilled.
Serving suggestions
Wrapped up in homemade sushi.
Sliced on top of a miso or vegetable broth with noodles.
Mixed through stir fried Asian greens - bok choy, bean sprouts etc.
Sandwiched with thick slices of avocado, grated carrot and cucumber.
