Miso Soup with Tofu Seaweed Prawn Enoki Mushroom

This is a super quick and comfort soup that can be made within 10 minutes. We can always customize ingredients to add more or reduce some. Sometimes I like to add some pipis/clams to sweeten and enhance flavour of the soup.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2-3 servings

Ingredients
50g Enoki Mushroom, root trimmed, halved lengthwise
100g silken tofu, roughly diced
4-6 raw prawns, peeled
2-3g dried Japanese natural seaweed, soaked & drained
11/2 tbsp Japanese miso soybean paste/2 packets of miso soup paste
3 cups water



Method

  • In a deep pan, add in 3 cups water, seaweed, diced tofu and enoki mushrooms, bring to boil.



  • When it starts to boil, add in prawns and 1 1/2 tbsp miso paste (add more or reduce as per your preference), stir gently to combine.



  • When it starts to boil again and the prawns have changed to pink colour, done.

  • Divide among soup bowls. Serve hot.
