Misoyaki BBQ Chicken

Inspiration for these chicken skewers came from a recent visit to one of Sydney’s Yakitori Bars; Chaco Bar Restaurant .

In my version, the chicken is marinated with Japanese condiments for a couple of hours, skewered and cooked over a BBQ.

They’re simple, quick and healthy to make, meaning non-cooks can’t mess this up. I opted to forego soy sauce in the marinade as I didn’t want to overpower the taste of the barbecued chicken.

The end result was extremely tender chicken pieces that tasted sensational – slightly sweet but predominantly salty - these can be enjoyed hot or cold.

These chicken skewers are far from being authentic yakitori hence the namesake Misoyaki … a hybrid of the miso used in the marinade and how they were cooked.

Preparation Time: 2 Hours (includes marinating time)
Cooking Time: 10 minutes
Makes: 6-8 skewers

Ingredients
2 Chicken Breasts
½ Cup Mirin
1 Cup Water
100g Shiro Miso Paste
4 Teaspoons Honey

Method
  • Soak bamboo skewers in water for approximately an hour.

  • Trim any excess fat off the chicken breast.

  • In a baking dish combine the miso paste, water, mirin and honey and mix to form a paste.

  • The marinade consists of miso paste, water, mirin and honey.


  • Add the chicken breast, making sure to coat the chicken. Place into the refrigerator and marinate for a couple of hours.

  • Marinate the chicken for a couple of hours.


  • Remove the marinated chicken from the refrigerator and cut into large cubes.

  • Thread the cubed chicken onto skewers and BBQ.

  • Cut the chicken breasts into cubes and thread onto bamboo skewers.


  • Baste the chicken skewers with the marinade and turn over to ensure all sides of the chicken skewers are fully cooked. Don't worry if some of the chicken become blackened - it's the marinade caramelising on the chicken AND it will add to the taste.

  • Cook the Chicken Skewers on a BBQ or Grill, turning and basting the chicken until cooked.


  • Serve immediately while hot. The chicken tastes even more delicious when cold and can easily be served as finger food at your next party or taken to your next picnic.

  • Simple, quick and healthy to make marinated BBQ chicken skewers or as I prefer to call them Misoyaki BBQ Chicken.
