Ingredients 600gm seafood (I used a salmon fillet, prawns and squid)
250ml Potato and Leek Soup 40ml cream
40ml white wine
1 tbsp. potato flour
2 spring onions
2 lge cloves garlic
Sea salt and freshly ground black pepper
1 sheet puff pastry
Egg wash (yolk and milk mix)
Preheat the oven to 210c
Cut the fish into 2 cm pieces, butterfly the prawns and slice the squid into squares. Slice the spring onions and crush the garlic.
Heat a little oil in a pan add the garlic and onion, sweat for a couple of minutes then add the soup, wine and cream and bring to the boil. Add the potato flour and cook for a few minutes, stirring all the time.
Add the seafood and combine with the thickened soup.
Spoon into your pie dish and cover with pastry. Place a few air holes in the top of the pastry and brush with the egg wash.
Place into the oven and cook until the pastry is golden and crispy.
