Mixed Veg Egg White Bake

Egg Whites Bake

Eggs are usually poached or scrambled. Here is an easy way to whisk them with some vegetables and bake them. Some of the toppings in this recipe reveal my pizza cravings.

It makes a healthy breakfast and can be made the previous day, saving time on busy mornings. You could use any vegetables like cabbage, brussels sprouts, carrots, beans and also mushroom in this recipe.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 1 serving

1 egg white
1 tbsp cut capsicum
1 tbsp chopped tomatoes

1 tbsp milk

1 tsp baking powder (optional)
1 tsp dried Chives (Optional, you can substitute this with some coriander leaves)
1 tbsp grated cheese(Optional)

Preheat the oven to 180 degrees celsius for about ten minutes.

Beat the egg white with some milk. Add salt and pepper,dried chives and season well.

After seasoning, add the vegetables and mix well.

Pour in a small and greased baking dish. Sprinkle some cheese on top.

Bake in the preheated oven for about 18-20 minutes.
Garnish with coriander or oregano and serve with bread or can be had as is.
