Moist Banana Cake

This is a great way to use up bananas that are going brown. It was fun making this moist and spongy cake.

Preparation Time: 20 minutes
Cooking Time: 30-45 minutes
Makes: Approximately 20 slices

Ingredients
4 ripe bananas
1/2 cup butter
1 1/2 cups sugar
2 large eggs
2 cups plain flour
1/2 tsp salt
1/2 tsp baking powder
1/2 cup milk
1 tbsp vanilla yoghurt

Method
  • Mash the bananas with a fork.



  • Cream the butter and sugar together, and then add the eggs.



  • Sift and weigh out the flour and mix into the cake batter.
  • Alongside, add the milk and the vanilla yoghurt.



  • Fold in the banana, and pour the batter into a greased cake tin.
  • Sprinkle brown sugar over the top of the batter.



  • Bake in the oven at 180 C for 30-45 minutes, or until golden.

  • Allow to cool for 5 minutes, and cut into pieces
