Moroccan Chicken and Vegetables
This is a rustic dish that is full of flavour. I was inspired for this one after watching Nigella make a tagine. I didn't have the right ingredients so I just chucked in what I had in my cupboard and this is what came out. My fiance loved it so I have kept cooking it!
You can also make this a vegetarian dish by omitting the chicken and adding eggplant and zucchini instead.
Preparation Time: 10 minutes
Cooking Time: 10 minutes on the stove 45 minutes in the oven
Makes: 4 servings
Ingredients
Chicken and Vegetables-
300g Chicken thigh fillet
1 large potato thickly diced
1 large carrot thickly diced
Large chunk of pumpkin thickly diced
1/2 large sweet potato
1/4 cup finely diced red capsicum
1/2 onion
1/4 cup finely diced spring onion
1 tbl fresh garlic mined
1 tsp minced ginger
1 chicken stock cube
Cous Cous-
2 cups cous cous
boiling water
1 tsp olive oil
1 tsp margarine
Method
Chicken and vegetables-
Pre heat oven to 180 degrees celsius.
Heat oil in a heavy based, ovenproof pan. (I use a cast iron french pan)
Add capsicum and onion, then add spring onion and garlic.
Add ginger and stir, then add chicken and cook until chicken is sealed, but not cooked through.
Add potato, carrot, sweet potato and pumpkin and stir to combine.
Add moroccan seasoning and coat chicken and vegetables well. Then add chicken stock mixed with a small amount of boiling water.
Bake with lid on the pan for approx 45 min until vegetables are tender.
Cous Cous - Prepare cous cous just before chicken and vegetables are ready to come out of the oven.
Pour cous cous into a container and add boiling water to cover 1cm above the cous cous.
Add olive oil, then put lid on and leave for 5 mins.
Once cous cous has absorbed water, add margarine and use a folk to rake cous cous and make fluffy.
Serve cous cous with chicken vegetables on top and enjoy
