Moroccan Eggs

A delicious and unique café style dish that is easy to make in your own home. Whipped up in minutes these are sure to please any breakfast or brunch guest.

Café style eggs at home.


Preparation Time: 5 minutes
Cooking Time: 4 minutes
Makes: 2 servings

Ingredients
1 large carrot
5 baby radish
1 tbsp olive oil
2 tbsp natural yogurt
1 tsp ground cumin
1/4 tsp rock salt
4 poached eggs
4 slices of bread



Method
  • Grate the carrot and baby radishes into a bowl. I used 5, you want the ratio of carrot to radish to be equal so add more radish if needed.



  • Add 1 tablespoon of good olive oil, the cumin and the salt - mix, taste and set aside.

  • Meanwhile put 4 eggs on to poach and cook your toast.

  • Arrange 2 pieces of toast on each plate and divide the cumin, carrot and radish mixture evenly.

  • Toast loaded with mixture.


  • Place the eggs on top of the mixture, add a dollop of yogurt to each egg and sprinkle with more cumin.

  • Serve and enjoy your Moroccan Eggs!
