Moroccan Honey Cake

Incredibly soft and moist, this indulgent is drenched in sweet honey.

Preparation Time: 35 minutes
Cooking Time: 1 hour 10 minutes
Makes: 10 servings

Ingredients
500g margarine
400g wholemeal self-raising flour
300g clear honey
150g flaked almonds
150g Truvia sweetener (or 500g caster sugar)
100g ground almonds
100ml buttermilk
2 tsp baking powder
8 eggs

Method
Pre-heat oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.



  • Cream margarine with sweetener/sugar.



  • Beat in one egg at a time with a handful of flour.



  • Fold in the flour, ground almonds, and baking powder, and then stir in buttermilk.



  • Pour the mixture into an 11 inch cake tin and bake in the oven for an hour and ten minutes.



  • Poke holes in the top of the take using a skewer and pour over the honey so that it absorbs in to the cake.



  • Toast the flaked almonds under the grill for a minute or two until slightly browned.



  • Scatter the almonds on top.
