Moroccan Spiced Lamb Steak Couscous
This recipe makes a versatile meal that is easy on the purse.

Ingredients
500g lamb leg steaks
1 tablespoon Moroccan seasoning
1 cup couscous
1 1/4 cup vegetable stock
1/2 cup finely chopped coriander leaves
1 brown onion, finely diced
1/3 cup finely diced carrot
Method
Preheat the oven to 200C. Marinade the lamb with the seasoning. Roast the lamb for 20 minutes.
Heat 2 tablespoons of vegetable oil in a stockpot. Add in the onion and saute for 5 minutes until softened.
Add in the coriander, couscous and carrot. Pour in the vegetable stock and bring to the boil.
Stir. Cover and cook for 5-7 minutes until the liquid has absorbed.
Stir with a fork to separate grains.
Serve with lamb leg steak.
