The only recipe that is true to an authentic Moroccan tagine.
Preparation Time: Overnight & 20 minutes for rice
Cooking Time: 3 hours
Makes: 2/3 servings
Ingredients
Diced lamb (10 chunks)
1 cup of brown rice
1 level tsp of cumin, paprika, turmeric, chilli, garam masala, mixed spice, cinnamon.
salt and pepper
2 cloves of garlic
Rub the said ingredients into the lam and leave overnight to marinate, then cook it for 3 hours:
Brown the lamb, then add 1 pint of chicken stock, after 1 hour add 1 tin of tomatoes
After 2 hours add sweet potato, 1 courgette 1 onion & 1 green or red pepper.
I usually add dates & use couscous but I didn’t have any, so instead I added 3 tablespoons of agave syrup and used brown rice cooked with desiccated coconut. With a sprinkling of parsley on top.
Enjoy with a few friends, this dish is always a winner and will warm the hearts of your loved ones.
