Morrocan Spiced Eggplant

Eggplant is a very juicy vegetable and perfect for stew. Try this easy eggplant stew recipe with moroccan spices.



Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients
1 large-sized eggplant, diced
3 tomatoes, chopped
1 brown onion, diced
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon garlic powder
1 tablespoon ground sweet paprika
1 tablespoon sugar
salt and black pepper

Method
  • Soak the diced eggplants in cold salted water for 10 minutes, to get rid of the bitterness. Drain.



  • Heat 2 tablespoons of olive oil in a large frying pan, add in the brown onion and saute until they are soft and caramelised.



  • Add in the diced eggplants and saute for 10 minutes until they are slightly tender. Add in the ground cumin, ground coriander, garlic powder and ground sweet paprika.



  • Continue sauteing for further 10 minutes until the eggplants are cooked and soft.



  • Add in the chopped tomatoes and sugar. Mix and cook until tomatoes are soft.



  • Season with salt and black pepper. Serve while warm.
