Muesli Berry Breakfast Parfait

A perfect, fresh and fruity breakfast!

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 4 servings

3 cup rolled oats
3/4 cup dessicated (or shredded) coconut
500g mixed dried fruit
Alternately, the mixed fruit can be substituded with:
1/2 cup sunflower seeds
100g pecans, chopped
50g pumpkin seeds
100g dried apricots, diced
150g sultanas

1 1/2 cups frozen mixed berries
1/2 teaspoon vanilla essence
1 tablespoon apple or orange juice
1 1/3 cups Greek-style yoghurt

Preheat the oven to 180.

In a bowl, add the oats and coconut (and seeds and pecans if using). Stir to combine.

Pour out onto a baking tray and bake for 25 minutes. Stir every 5 minutes until completed toasted. Set aside to cool.

Return the toasted oats to a mixing bowl and stir through the miced dried fruits (or sultanas and apricots is using). Transfer the completed muesli to an airtight container for storage.

In a small bowl, mix the frozen berries, vanilla and juice. Set aside for 10-20 minutes to thaw the berries. (Alternately, place the berries in a bowl on their own and microwave for 20-40 seconds)

In a glass, spoon 2 tablespoons of muesli into each. On top of that, spoon 2 tablespoons of yogurt, then 2 tablespoons of the berry mixture. Do the same again for a second layer.
