Muffins Using Overripe Bananas

When the bananas in your fruit bowl are reaching a stage of ripeness where they are no longer suitable to take to school, or even peel, throw them in the freezer and save them until you have time to use them in this delicious Banana Muffin recipe.

Preparation Time: 15 minutes
Cooking Time: 15-20 minutes
Makes: 12 servings

Ingredients and equipment

Ingredients
¾ cup sugar
½ cup butter or margarine
2 eggs, beaten
2 ripe bananas, mashed
2 cups of plain flour
4 teaspoons of baking powder
¼ cup of milk

Equipment
1 large mixing bowl
1 mixing spoon
Set of measuring cups
1x12 or 2x6 muffin tray
12 paper muffin cases

Method
  • Preheat the oven to 180& #730 ;C.
  • Mix butter and sugar together.
  • When creamy, mix in the eggs and banana and stir well.

  • Add the flour, baking powder and milk and stir until combined.

  • Flour, baking powder and milk are added

  • Place the muffin cases into the muffin tray and divide the mixture equally.

  • Fill the muffin cases

  • Cook for 15-20 minutes until muffins are golden brown.
  • Check with a skewer. When the mixture no longer sticks to the skewer, your muffins are ready. Leave them to cool on a wire rack.

  • Enjoy your banana muffins
