Multi SeededGrain Cob

In the bread world, nothing is more attractive than a dark shiny glaze with seeds scattered over the top. Not only does this rustic loaf look lovely, but it provides a great crunch, and is full of nutritious goodness as it uses a whole range of different seeds and grains.

Preparation Time: 2 hours 20 minutes
Cooking Time: 40 minutes
Makes: 1 cob

Ingredients
7g fast action yeast
½ tsp salt
400ml water
1 tbsp sunflower seeds
1 tbsp pumpkin seeds
1 tbsp poppy seeds
2 tbsp linseeds
100g wheatgerm
100g rolled oats
100g white bread flour
200g rye flour
200g wholemeal bread flour
1 egg

Method



  • Mix all flours, yeast, salt, oats, and wheatgerm together.
  • Add all the seeds, excepts for 1tbsp linseeds.



  • Gradually pour in the water to form a dough.



  • Knead for ten minutes, then prove for two hours.
  • Pre-heat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/375 & #3872 ;F/5 G



  • Beat the eggs and brush it over the cob loaf.
  • Scatter the linseeds on top, and then score the bread.



  • Bake in the oven.
