Mumas Spring Rolls
Authentic Chinese street food at its finest. This recipe is my boyfriend's mothers recipe. Every time we visit her she has these and her famous [linkhttp://recipeyum.com.au/fried-pork-prawn-wonton/ wontons] ready and he has been eating them since he was a toddler. The smell is amazing, they are made with love and taste beautiful. Skip the frozen food aisle and have a go at making these crispy snacks yourself.
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 40 servings
Ingredients
For the meat mix
500 grams minced pork
300 grams prawns
2 shallots
1 handful Chinese coriander
Salt and pepper
2 tsp soy sauce
1 tsp sesame oil
2 garlic cloves
2 tsp ginger root
For the vegetables
1 cup cabbage
1 cup bean sprouts
For the omelet
4 eggs
Salt and Pepper
40 spring roll wrappers
Vegetable oil to fry
Method
For the meat mix. Chop up all the ingredients and cook over a high heat with a little bit of oil. Set aside.
For vegetables simply wash the bean sprouts and thinly slice the cabbage. Set aside.
For the omelet whisk together the eggs with salt and pepper and cook over a medium heat in a non stick pan. Once cooked remove from the heat and slice. Set aside.
Once all your ingredients are cooked peel of a spring roll wrapper and lay it flat. Place a quarter of a cup of the meat mix, a few vegetables and pieces of egg on the wrapper near one corner.
Roll the wrapper up like you were wrapping a present as shown.
Place on a plate until ready to fry.
Once you are ready to fry pour enough oil into a wok to shallow fry and turn the heat up. Carefully place a few spring rolls in the work and turn as they turn golden.
Place in an old egg carton to drain as you cook the rest and serve with sweet chilli sauce and gui lin chilli sauce.
