Mums Chow Mein

Back in the 80's this meal was considered exotic. It is nothing like the chow mein you will find in a modern Chinese restaurant but it is still one of my favourite meals.

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 6-8

Ingredients
1 onion diced
500 g beef mince
3 carrots, peeled and diced
1 cup peas/corn
1/2 cabbage, shredded
1 cup rice
3 tsp curry powder
1 litre of chicken stock
salt and pepper
1 tsp oil

Method
  • Heat the oil to medium heat in a very large frying pan. Add the onion and beef and cook for 5 minutes or until the onion is soft and the beef has browned.

  • Add the carrots, peas, corn, rice, curry powder and stock and mix well to combine. Cook for 5 minutes before mixing in the cabbage.

  • Cook for 30 minutes until the stock has absorbed and the rice is cooked. Stirring occasionally so the rice doesn't stick to the bottom of the pan.
  • Season with salt and pepper before serving.
