Mums Chow Mein
Back in the 80's this meal was considered exotic. It is nothing like the chow mein you will find in a modern Chinese restaurant but it is still one of my favourite meals.
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 6-8
Ingredients
1 onion diced
500 g beef mince
3 carrots, peeled and diced
1 cup peas/corn
1/2 cabbage, shredded
1 cup rice
3 tsp curry powder
1 litre of chicken stock
salt and pepper
1 tsp oil
Method
Heat the oil to medium heat in a very large frying pan. Add the onion and beef and cook for 5 minutes or until the onion is soft and the beef has browned.
Add the carrots, peas, corn, rice, curry powder and stock and mix well to combine. Cook for 5 minutes before mixing in the cabbage.
Cook for 30 minutes until the stock has absorbed and the rice is cooked. Stirring occasionally so the rice doesn't stick to the bottom of the pan.
Season with salt and pepper before serving.
