Mums Mini Quiches

I love this go-to recipe for any parties, picnics, or really for any time at all. The recipe also quite forgiving so feel free to add or remove anything you'd like from the recipe.

Preparation Time: 15 minutes
Cooking Time: 12-15 minutes, each tray
Makes: 102, approximately

Ingredients
12 pre-made frozen puff pastry sheets
4 large eggs
3/4 cup cream
3 spring onions (or shallots)
125g cheese, grated
250g ham (or bacon)
1 tsp chicken stock powder
black pepper
paprika

Method
  • Preheat the oven to 180°C and remove the puff pastry from the freezer (if frozen) to allow to thaw.

  • While the oven is pre-heating and the pastry is thawing whisk the eggs, cream, chicken stock powder, and black pepper in a large bowl until well combined.

  • Mix in the grated cheese, then add the finely sliced shallots and ham.

  • Use a muffin tray, or similar, for your quiches. I call mine the mini quiche tray.



  • Hopefully by now the pastry has thawed just enough that you are able to cut it and place it into the trays. It's best to cut the pastry using a cookie cutter that is a centimetre larger in diameter than mini quiche trays as it gives the quiches just enough crust around the edges.



  • Fill each case with roughly a tablespoon of quiche mixture, and then top with just a sprinkling of paprika. This adds an extra smokey flavour to the quiches as well as colour.

  • Place the quiches in the oven and bake for 12-15 minutes or until they are golden brown.

  • And voila! There you go, beautiful mini quiches.
