Munchkin Pumpkin Sandwich

Bored with bread? Or just trying to cut the carbs? Why not make a sandwich with a difference by giving it an autumn twist.

Munchkin pumpkins are miniature pumpkins, and can be cut in half to make the base of a sandwich. A moist filling works best; I've used avocado, but you can also use mayonnaise, or anything else you might fancy.

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 1 serving

Ingredients
1 munchkin pumpkin
1 small avocado
A handful of spinach leaves
A dash of lemon juice
A dash of soy sauce
A dash of tabasco sauce
3 prawns

Method
  • Pre-heat oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/ 375 & #3872 ;F/ 5 Gas



  • Cut the pumpkin in half and scoop out the pith and seeds.
  • Separare the pith from the seeds and dab the seeds dry with a paper towel.



  • Bake the pumpkin and seeds in separate containers for twenty minutes in the oven.



  • Peel and pit the avocado, then mash it into a puree.
  • Stir in the spinach, pumpkin seeds, lemon juice, soy sauce, and tabasco sauce.



  • Place the prawns in the cavity of the pumpkin, then spread the avocado mixture on top.



  • Place the top half of the pumpkin on top.
