Bored with bread? Or just trying to cut the carbs? Why not make a sandwich with a difference by giving it an autumn twist.
Munchkin pumpkins are miniature pumpkins, and can be cut in half to make the base of a sandwich. A moist filling works best; I've used avocado, but you can also use mayonnaise, or anything else you might fancy.

Makes: 1 serving
Ingredients
1 munchkin pumpkin
1 small avocado
A handful of spinach leaves
A dash of lemon juice
A dash of soy sauce
A dash of tabasco sauce
3 prawns
Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/ 375 ༠F/ 5 Gas
Cut the pumpkin in half and scoop out the pith and seeds.
Separare the pith from the seeds and dab the seeds dry with a paper towel.
Bake the pumpkin and seeds in separate containers for twenty minutes in the oven.
Peel and pit the avocado, then mash it into a puree.
Stir in the spinach, pumpkin seeds, lemon juice, soy sauce, and tabasco sauce.
Place the prawns in the cavity of the pumpkin, then spread the avocado mixture on top.
Place the top half of the pumpkin on top.
