Munchy Honey Cakes

Delicious Munchy Honey Cakes are loved by 'Bananas in Pyjamas' and are the only currency worth having in their home town 'Cuddlestown'. Make these for the little people in your life and they will be delighted. Even better, get them to help as this recipe is ideal for kids to make.

This recipe is so quick, healthy, and delicious that it has become one of my favorites. Even if you aren't fan of Bananas in Pyjamas, you are sure to be a fan of this recipe!

Munchy Honey Cakes

Preparation Time: 10 minutes
Cooking Time: 10-12 minutes
Makes: 15-20

1 cup self-raising flour
1/2 cup corn flakes
1/2 cup sultanas
1/2 cup rolled oats
1/2 cup fine desiccated coconut
60g butter
1/2 cup honey

Heat the oven to 180 degrees fan-forced.
Sift the self-raising flour into a mixing bowl. Add the corn flakes, sultanas, rolled oats and coconut then stir.

Melt the butter and honey together in the microwave in a microwave-safe container. This will take approx. 1 1/2 - 2 minutes depending on your microwave.
Pour the melted butter and honey into the mixing bowl and stir until combined.

Put tablespoons of the mixture onto greased baking trays.

If you have a round tablespoon measure, you can simply scoop up the mix, hit it out on the baking tray, and press it down for a cookie shape. My personal preference is to not press them down as the flattened version comes out slightly more crunchier.

Flatten the cakes out for a cookie shaped cake, or leave it rounded. Flattening the cakes makes them slightly crunchier.

Bake for 10-12 minutes until the cakes are a golden colour.
