Mushroom Beef and Spinach Lasagne

This is a delicious variation of the traditional classic and, although it takes a bit more time to prepare, it’s totally worth it. Make it a day ahead and put it in the fridge until you’re ready to bake, or serve left overs with salad the next day for a quick and easy lunch.

Preparation Time: 25 minutes
Cooking Time: 50 minutes
Makes: 6 adult servings

Ingredients





2 tablespoons olive oil
1 onion, chopped
250g mixed mushrooms, chopped
1 zucchini, coarsely grated
4 cloves garlic, coarsely chopped
700ml jar passata
2 teaspoon dried oregano
1 teaspoon ground nutmeg
300g packet fresh lasagne sheets
250g fresh silver beet
1 tomato, thinly sliced
750g fresh ricotta
2 cups tasty cheese, grated

Method
  • Preheat oven to 160°C (fan-forced).
  • Wash silver beet and remove stems.
  • Roughly chop silver beet and place in a deep saucepan. Cover with boiling water for three minutes, or until wilted. Drain well and set aside.
  • Heat oil in a large frying pan on high.
  • Brown mince for 6 to 8 minutes, using a fork to break up any lumps.



  • Stir in garlic, onion, mushrooms and zucchini.
  • Cook for 4 to 6 minutes, or until onion is tender.



  • Add passata and oregano, and stir until combined.
  • Bring to boil, and reduce heat to medium.
  • Simmer, uncovered, for 10 to 15 minutes.
  • Season to taste with salt and freshly ground black pepper.



  • Taking silver beet, add nutmeg and ricotta and stir to combine.
  • Spread 1 cup of beef and mushroom sauce thinly over the base of a large ovenproof dish.



  • Cover with a layer of fresh lasagne sheets.



  • Top with half remaining beef and mushroom sauce then a layer of lasagne sheets.
  • Top with half silver beet and ricotta mixture then a layer of lasagne sheets.
  • Top with remaining beef then lasagne.
  • Finish remaining silver beet and ricotta.

  • Note that silver beet and ricotta have not been combined in the above image. Ideally, the silver beet should be limp from boiling and combined with ricotta. This will make for easier spreading.


  • Sprinkle with grated cheese.
  • Top with tomato slices.



  • Cover with foil and bake for 40 minutes.
  • Remove foil and bake for a further 5 to 10 minutes, or until golden.
  • Enjoy.
