Mushroom Stroganoff

Here is a delicious vegetarian version of a traditional beef stroganoff. It is a healthy comfort food dish for a cold night at home which is also very simple to prepare.

Mushroom Stroganoff

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4 servings


450 grams mushrooms
1 red onion
1 tablespoon butter
4 cloves garlic
120 mls white wine
1 teaspoon grated nutmeg
1 tablespoon balsamic vinegar
2 tablespoons parsley or coriander
3 tablespoons thickened cream or yogurt
1 red capsicum
salt/pepper (to taste)

Chop the onion and garlic and fry them in the butter.

Fry the mushrooms

Chop and add the fresh mushrooms. Cook the chopped mushrooms with the onion and garlic for ten minutes, until they are soft and golden in color.

Add the cream

Add the remaining ingredients and simmer gently for approximately five minutes.

Serve hot with pasta, rice or mashed potato

Serve your delicious mushroom stroganoff while hot with cooked pasta, rice or mashed potato. Enjoy.
