Mussels in Curried White Wine Broth
It tastes stunningly delicious, but is so simple to prepare.

Cooking Time: 5-10 minutes
Makes: 4-6 servings
Ingredients
1kg fresh live mussels, cleaned
1 Japanese curry cube, 1cmx2cmx2cm
1 brown onion, peeled, sliced
2 chilli (optional)
4 tbsp white wine
2 cups water
1 tbsp olive oil
Method
Heat 1 tbsp olive oil in a large pot or deep saucepan over high heat.
Add onion slices and chilli (only if you like to add some spicy flavour). Saute onion until just before brown.
Add the curry cube, followed by white wine and 2 cups water. Bring to a boil.
Place mussels into the pan. Cover and cook for 2 minutes.
Lift the lid. Most should have already been opened. Stir thoroughly till almost all are opened, just for about another 1 to 2 minutes.
Throw away those unopened ones. Don't overcook to dry them in order to ensure a soft, moist and tender texture.
Serve as it is with bread, steamed rice or noodles.
