Mustard Herb Chicken
Eating healthy doesn’t mean foregoing taste. This French inspired dish bursts with flavour from the combination of Dijon mustard, fresh basil, oregano, thyme and fennel. Grilling the sauce coated chicken helps keep it tender and moist.

Ingredients
3 tablespoons Dijon mustard
2 tablespoons of fresh herbs (basil, oregano, thyme, fennel seeds)
1 tablespoon rice malt syrup
2 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
2 skinless chicken breast
Method
Pre-heat a BBQ or grill. (Ensure to drizzle a little olive oil on the BBQ hot-plate).
Use a sharp knife to butterfly the chicken breasts in half.
Finely dice all the herbs.
Basil, oregano, thyme and fennel combined with Dijon mustard will create a beautiful tasting paste to cook the chicken in .
In a small bowl combine the mustard, rice malt syrup, apple cider vinegar, extra virgin olive oil and diced herbs and whisk together with a fork, to end up with a thick paste.
Liberally coat the top of each chicken breast with the mustard and herb sauce.
Coat each chicken breast with the mustard and herb sauce.
Place the chicken breast (sauce side down) onto the BBQ or grill and use the remaining mustard and herb sauce to cover the other half of the chicken.
Cook the chicken for approximately 15 minutes then turn the chicken over to cook on the other side for another 10 minutes.
Cook the chicken breast sauce side down in the first instance then turn over and cook the other side.
