Mustard Mayonnaise
This eggless mayonnaise is light, sweet and complements food without overpowering it. I used this regularly during my 60 Day Clean Eating Challenge as it goes well with raw or cooked vegetables, fish and chicken. It will keep for up to a week when refrigerated.

Makes: 200ml
Ingredients
2 Teaspoons Dijon Mustard
2 Teaspoons Wholegrain Mustard
4 Tablespoons Rice Malt Syrup
4 Tablespoons Extra Virgin Olive Oil
Method
Combine all ingredients into a small bowl and whisk with a fork until smooth, creamy and thick. Refrigerate until required.
This healthy and eggless Mayonnaise is quick and simple to make and goes perfectly with raw or cooked vegetables, fish and chicken.
