This eggless mayonnaise is light, sweet and complements food without overpowering it. I used this regularly during my 60 Day Clean Eating Challenge as it goes well with raw or cooked vegetables, fish and chicken. It will keep for up to a week when refrigerated.

Preparation Time: 5 minutes
Makes: 200ml

Ingredients
2 Teaspoons Dijon Mustard
2 Teaspoons Wholegrain Mustard
4 Tablespoons Rice Malt Syrup
4 Tablespoons Extra Virgin Olive Oil

Method
  • Combine all ingredients into a small bowl and whisk with a fork until smooth, creamy and thick. Refrigerate until required.

  • This healthy and eggless Mayonnaise is quick and simple to make and goes perfectly with raw or cooked vegetables, fish and chicken.
