When I say fresh salsa, I'm talking about a really chunky tomato onion and herb salsa. Not only beautiful colours but it adds great flavour to nachos or any dish. It can be used in burritos or tacos. Whatever you like.

Nachos with Fresh Salsa, yum!
Preparation Time:5 minutes
Cooking Time: 10-15 minutes
Makes: 1 - 2 people
Ingredients
Your favourite corn chips
1 tomato
1 red onion
A handful of Italian parsley ( or whatever fresh herbs you have on hand)
Mozzarella or tasty cheese as much or as little as you like.
1 tablespoon of Spanish olive oil
Method
Dice tomato and onion and finely chop the parsley and add to a bowl with a tablespoon of olive oil and mix through.

My fresh salsa
In a Pyrex dish add in the nachos and top with the salsa. I usually put about two handfuls of chips just for me.

Looks at all the colours on those nachos, colour and flavour hit all in one.
Once you have spread the salsa over, sprinkle on the cheese.
Bake at 180 degrees celsius for about 10-15 minutes just until the cheese melts.
A tasty addition to the middle of the table at dinner or just as a snack for 2 while watching the football.
