Nanas Peanut Oat Cookies

My Fiancee made these for me when we first started going out. They are a recipe his Nana made him as a child and have remained a favourite with good reason; they are super easy to make and very tasty.

Preparation Time: 7 minutes
Cooking Time: 15 minutes
Makes: 22 Biscuits

Ingredients
2 cups rolled oats
3/4 cup SR flour
1/2 cup firmly packed brown sugar
1 cup peanuts
1/4 cup melted margarine
1 egg

Method
  • Pre heat the oven to 160 degrees celsius.

  • Place all dry ingredients in a mixing bowl and stir to combine.



  • Add egg to melted margarine and stir well to break up the egg and thicken the margarine. (This is what binds to cookies together.

  • Add egg and margarine mixture to dry ingredients and stir to combine.



  • You can either use your hands to shape the cookies or use 2 soup spoons (1 to gather and the other to flatten and shape the mixture).



  • Place the cookies in a tray lined with baking paper and place in the oven for approx 15 minutes.



  • Allow cookies to cool before removing them from the baking paper.



  • Cookies will keep in an air tight container for up to 2 weeks--If they last that long.
