Nasi Goreng is an Indonesian dish which translated means "fried rice".
In this recipe I have used turkey mince as I had some frozen leftover from another meal, and it worked out very nice.
I was going to put fried shallots on top (which is very traditional) however forgot to buy these, and they would go well with this dish -I used salted peanuts instead and mixed them in after I cooked the meal and before I plated it.
I did not make anything else with it as it has several vegetables incorporated in the rice, and I used brown rice instead of the traditional white rice, as it is healthier.
Preparation Time: 20 minutes
Cooking Time: 15- 20 minutes
Makes: 6 servings
Ingredients
3 cups cold, cooked brown rice
About 300 g turkey mince
2 tbsp oil
A bunch broccolini, cut into small pieces
1 red capsicum, cut into thin pieces
2 -3 rashers shortcut bacon, cut into pieces
½ cup frozen peas
4 spring onions, finely sliced
2 tbsp kecap manis
2 tbsp tomato sauce
1 tbsp soy sauce
3 tsp sambal oelek
Eggs, fried
2 tbsp fried shallots -optional
Handful of salted peanuts -optional
Method
Spray a large wok with oil and add the mince on high. Cook for about 4 - 5 minutes, breaking up the lumps as it is cooking. Transfer to a bowl
Cook the bacon for a few minutes and then add the broccolini, and cook for a further 2 - 3 minutes.
Now add the capsicum, frozen peas and the spring onion and stir fry for another minute or two.
Return the mince to the wok and add the rice, sauces and paste, and stir fry about 2 - 3 minutes or until it is hot.
Meanwhile fry the eggs in another pan, or this can be done a bit earlier.
Add the salted peanuts and stir through, serve and top with the shallots and a friend egg.
