
A delicious meal all the family will enjoy
My now husband cooked this for me early in our relationship. Not a lover of anything with mince, I was not looking forward to dinner and seeing some cottage cheese ready for inclusion was even more worrying. I was in for a surprise as it was a great meal and one that has been cooked many times since.
My fussy toddler also enjoys it too so it makes a great dinner that all the family can enjoy.
This lasagne doesn't have a traditional cheese sauce which makes it extra quick to prepare. The key is to have a great bolognese sauce. I usually make up a big vat of sauce in advance and freeze it in batches so that I can make a lasagne at a moments notice.

Cooking Time: 45 minutes
Makes: 4 servings
Ingredients
Bolognese sauce made from 250g of minced beef
8 Dry Lasagne Verdi sheets
300g cottage cheese
220g cheddar cheese
Large handful of spinach
The method of really just about layering your ingredients in an oven proof dish.
Method
Spoon in half of the bolognese sauce
Place a layer of the spinach on top
Lay one layer of lasagne verdi sheets
Sprinkle out a layer of half of the cheddar cheese
Lay one layer of lasagne verdi sheets
Spread out the cottage cheese
Lay one layer of lasagne verdi sheets
Spread out the remaining bolognese sauce
Lay one layer of lasagne verdi sheets
Top with a good helping of cheddar cheese
Cover with foil and bake in the oven for 40 minutes
Remove foil and continue to cook for 5 minutes until the cheese is bubbling.
The lasagne smells amazing as you take it out of the oven. It's great served with a salad, garlic bread and if you're of legal age then a lovely bottle of red wine too.

The key is a great tasting bolognese sauce

Green lasagne is the most tasty

Don't turn your nose up at cottage cheese, it tastes great in this lasagne
