NoChurn Banana Ice Cream
One of the most annoying things about buying fruit is that sooner, rather than later, it starts to go bad. When bananas start to go bad, I usually make banana bread or banana muffins but today, I decided to do something different. I think I just really felt for ice cream and decided to make the best of an over-ripening situation, and my cravings for something sweet.
I really wasn't sure how this ice cream would work out because I've never made a no-churn ice cream before. Despite all of that, I am SO unbelievably happy with how this turned out! Not only does it taste AMAZING, I was able to use my browning bananas for something other than a cake or bread!
Preparation Time: 15 minutes
Cooking Time: 6 hours
Makes: 4 servings
Ingredients
500ml of heavy whipping cream
400g tin of condensed milk
1 teaspoon of vanilla essence
3-4 large bananas
Method
In a large bowl, stir the condensed milk and vanilla essence together until combined.
Mash the bananas roughly in another bowl.
Stir the banana into the condensed milk mixture and set aside.
In a medium sized bowl, beat the cream until stiff peaks form.
Gently fold the whipped cream into condensed milk mixture until combined.
Pour the mixture into a loaf pan and cover with cling wrap.
Place into the freezer for 6-8 hours, or until set.
Enjoy this amazing ice cream as it is OR drizzle the ice cream with homemade caramel or your favourite toppings.

Halve the caramel filling ingredients to make a single batch of caramel, or make the double batch if you really love caramel.
