No Cooking Mexican Egg Salad

This is another great salad that you can have as a meal, and it requires no cooking other than boiling some eggs!

Easy to make, and vegetarian, it can be eaten up to a few days later as well.

I used home made pickled vegetables instead of minced ones but either would do.

Serves: 2

Ingredients
3 large hard boiled egg, coarsely chopped
About 1/3 cup celery or slightly less
2 tbsp minced pickle or similar
Bit of dry mustard
Bit of crushed cumin seedsPepper
½ tsp vinegar
Mayonnaise, to taste
Salad greens, optional

Method
  • Mix all the ingredients except the mayonnaise and salad greens.


  • Add some mayonnaise to moisten the salad.

  • Serve on top of some greens of your choice.
