If you like mushrooms, this is a healthier version than making it with the crust, and I actually prefer it without the crust.

Ingredients
2 eggs
1½ cups low fat milk
1 cup cheese, grated
1 cup mixed mushrooms, sliced
½ cup plain flour
1 - 2 spring onions, chopped
Chili flakes (optional)
1 tomato, sliced
Method
Preheat the oven to 190°/170° fan forced.
Whisk the eggs and milk in a bowl.
Stir in the cheese, mushrooms, flour, spring onions and some salt and pepper, to taste. Mix all together.
Spray a 23 cm pie dish or similar, and put the tomato slices on the top.
Bake for about 30 to 40 minutes or until the quick is set and firm.
Serve with thick slices of crusty bread, and/or a salad.
