No Whisk Microwave Meringues
I love meringues and it's really not that much hassle to whisk the egg whites and fold in the sugar. However, I also love an experiment. I had heard of microwave meringues and decided I would give it a go. I ended up experimenting with sizes and times in the microwave and can conclude that all variations tasted crisp and sweet but they didn't quite have the luxurious look of one made in the traditional method.
These would work well if you wanted to quickly make meringues to use as part of a recipe like Eton Mess or would work well sandwiched together with cream and fruit.
With only two ingredients needed and no arm aching whisking, this is a bit of fun to try out.
Preparation Time: 2 minutes

Ingredients
1 egg white
300g icing sugar
Method
Add the icing sugar to the egg white.
Mix together. It will look as if you have far too much icing sugar to start but in under a minute it will quickly come together.
Mix until fully combined and you have a thick paste like consistency.
Roll balls of mixture. I experimented with marble sized and up to a small bouncy ball size.
Place two to three balls on a piece of kitchen paper on a plate at a time (up to four if they are as small as marbles).
Heat in the microwave for one minute on full power. I tried some larger ones at 90 seconds but they burnt in the centre, whereas a minute seemed just right at for all sizes.
The meringues expand in the microwave while they cook.
Leave to cool for a few seconds and it's as simple as that.

Depending on the strength of your microwave you may need a little longer cooking.
