NoBake Peanut Butter Cheesecake with Chocolate Brownie Base
Three of my favourite things in one dessert - cheesecake, peanut butter and brownies!
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes: 8 servings
Ingredients
One batch of
No-chocolate chocolate brownies
250g cream cheese, chopped (room temperature)
1 cup smooth peanut butter
400g sweetened condensed milk
1 cup icing sugar
1 teaspoon vanilla extract
1 cup thickened cream, whipped
Method
Create the No-chocolate chocolate brownie . Instead of using a deeper sided baking tray, use a shallower but wider baking tray to make a shallower brownie.
Beat the cream cheese and peanut butter until smooth.
Add the icing sugar and beat until combined
Add the condensed milk and vanilla. Beat to combine.
In a separate bowl, beat the cream until small peaks form. Fold the cream into the peanut butter filling.
Take 8 cups or bowls. Take the cooled brownie. Cut discs of brownie the same shape as the cup or bowl bases.
Press each disc-shaped brownie into the base of each cup or bowl.
Top each brownie with even amounts of peanut butter filling.
Refrigerate for at least 1 hour, or until the cheesecakes are firm, before serving.
