Nobustyle Black Cod

I first enjoyed black cod in a Japanese restaurant in Clapham. I'd never been a huge fan of Japanese food, but a friend recommended we order the 'black cod' on the menu. It was epic. The fillet melted like butter and since enjoying it at a few restaurants since that first introduction, I've found the Nobu restaurant version, adjusted somewhat and made this wonderful dish.



Preparation Time: 24 hours / 2 days
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
Soba noodles
500g cod fillet
3 tbslp miso paste
150ml sake / white wine
50ml mirin
Handful of fresh spinach



Method
  • Pour the sake/wine into a saucepan, add the miso paste and mirin and stir over a medium heat until all of the paste is dissolved.



  • Place the fish in a tray / Pyrex tray and pour over the marinade.



  • If you have the patience, allow the fish to marinate for 2 days, but if time is against you, 24 hours is fine. Keep the fish covered, in the fridge.

  • After marinating place the fish and marinade in a large saucepan and turn the heat to high.





  • Continue to coat the meat in the marinade, to keep it moist.



  • Steam the noodles for 10 minutes and add to the bowl. Add the spinach leaves and place the fish on top.



  • Enjoy.
