Nobustyle Black Cod
I first enjoyed black cod in a Japanese restaurant in Clapham. I'd never been a huge fan of Japanese food, but a friend recommended we order the 'black cod' on the menu. It was epic. The fillet melted like butter and since enjoying it at a few restaurants since that first introduction, I've found the Nobu restaurant version, adjusted somewhat and made this wonderful dish.
Preparation Time: 24 hours / 2 days
Cooking Time: 20 minutes
Makes: 2 servings
Ingredients
Soba noodles
500g cod fillet
3 tbslp miso paste
150ml sake / white wine
50ml mirin
Handful of fresh spinach
Method
Pour the sake/wine into a saucepan, add the miso paste and mirin and stir over a medium heat until all of the paste is dissolved.
Place the fish in a tray / Pyrex tray and pour over the marinade.
If you have the patience, allow the fish to marinate for 2 days, but if time is against you, 24 hours is fine. Keep the fish covered, in the fridge.
After marinating place the fish and marinade in a large saucepan and turn the heat to high.
Continue to coat the meat in the marinade, to keep it moist.
Steam the noodles for 10 minutes and add to the bowl. Add the spinach leaves and place the fish on top.
Enjoy.
